Cucumber Salsa

This cucumber salsa is a great stand-alone as a vegetable dipper or use it to complement you fresh grilled chicken or fish. The cucumbers add a nice fresh summer crunch, while the lime and cilantro brings a little zing to it’s flavor. Want to sweeten it up? Give it a little dash of Agava to taste. Want to burn down the house? Add some extra jalapeño (to taste).

Makes 6 servings


3 medium to large cucumbers, seeds removed and diced

3 small to medium tomatoes, diced 

medium green bell pepper, diced

2 jalapeño peppers, minced

1/2 cup red onion, chopped

2 tablespoons cilantro, minced

2 tablespoons  fresh dill, minced (optional) 

3 squeezes of lime juice (fresh or bottled)


Combine the cucumbers, tomatoes, bell pepper, jalapeño pepper, and onion in a small mixing bowl. Add cilantro, dill, and lime juice, and mix well. Chill before serving.
